Deconstructing old favorites

As an Italian (1/2) I have grown up with parm in several varieties. In thinking about how to make in in a health conscious way that could fulfill my desires, we created a deconstructed, layered version that removed the guilt. Non fat ricotta and mozzarella can be procured at at many places, including Whole Food. Blend in garlic and fresh herbs to create desired effect.
